I’ve been on a keto ice cream kick
I made some from snow
But sometimes, I just make a simple little mason jar recipe
For the taste of something sweet
A half cup or full cup of heavy cream
1 tablespoon vanilla extract
1 ½ tablespoon honey (or sugar, if you don’t have honey)
Add all to a mason jar, lid it and shake
Shake it like a polaroid picture for five minutes
Shake it while you dance and shimmy around the kitchen
You have to move while you do
Otherwise, it will like like your best imitation of a teenage boy with a Sears catalog on a lonely Saturday night
Me… I can’t help but giggle every time I make it
And move my booty in rhythm to the music
Even if it is only me singing
Then, pop it in the freeze for a few hours
I like it soft serve, so it’s between two and three for me
Then I sit in the chair, put a blanket across my lap and dive into some delicious treat while I watch a show
One time, I added a scoop of peanut butter, which turned it into a swirl
One day this week, I’ll make some caramel with butter and brown sugar and pop it in too
If you don’t have cream, you can make it with 1 cup of milk and 2 tablespoons butter
Melt the butter, warm the milk in pot and whisk in the butter
You want the milk warm otherwise it will chunk up the butter when it hits the cold liquid
Since I moved into this place, I’ve been “making” a lot of my stuff instead of buying it
When I make anything besides eggs
Because that’s my staple meal
Or has been for the past month
Now I go into the one can of tuna dropped into a bagged salad phase
Drizzle with oil/vinegar or lemon juice and enjoy
I did that a lot when I was running long distance
Add one cold beer for hydration
And that’s it
That’s my simple same dinner plan for the month of February
3 eggs for breakfast
Tuna and salad for dinner
For 28 days
With maybe one night out to eat in that month
I still haven’t gone out to celebrate my new move
Still haven’t had a happy hour beer to toast the “W” either
Though I want to
And sometimes plan to go
Maybe the ice cream is my reward for not giving in to the very strong temptation
This month, I’ll probably add some protein powder to one, to see how it tastes
And maybe some cocoa powder to another for some choco- goodness
If you don’t have a mason jar, you can use a ziploc bag
My recommendation is to use the one that closes and not the sandwich bag with the fold over top
but you do you
and you won’t have to scream
to kick it with keto ice cream
