Mom made cinnamon toast.
I’m not suggesting my very young mother couldn’t cook when we were growing up.
But…
We ate a lot of hamburgers and French fries.
Breakfast was cinnamon toast.
A piece of white bread.
Two chunks of real butter in two clumps.
Sprinkle with sugar.
Sprinkle with cinnamon.
Put under the gas flame broiler for a few seconds.
It was often dark, almost black on the edges.
The butter made two soft mushy spots in the bread but the sugar and cinnamon glazed under the flame.
Served with a glass of milk.
Sometimes it was dry instant milk mixed with water, which can end up tasting a lot like skim if done right.
It was not always done right.
That’s how we got to enjoy rice krispies with water, though they were the Safeway generic brand of cereal and not the three character Kellogg’s version.
I still make cinnamon toast once very six months or so.
My go to breakfast when there’s time is pancakes.
Or used to be, for my older kids.
Now it’s bacon and eggs.
More for others than me.
I got a lot of practice making pancakes, which are so hard to mess up, that messing up can be easy.
Batter too thin and the hotcakes are like chewy paper.
Batter too thick and the bottom side can burn before it cooks all the way through.
Add protein powder and it changes cooking time.
Same with fruit bits and pieces of treats mixed in the pancakes.
Except chocolate chips, which just seem to make them perfect.
In taste, if not texture or appearance.
Toppings are as varied as the colors on the cake.
Peanut butter, nuttella, syrup, honey or my favorite is jam.
Preferably bought from some mom and pop stand or general store, with a hand written price tag done in ink on a tiny white sticker.
Maybe not made with love, but made in a kitchen.
Though there must be some love in it, otherwise, why bother?
When we go out for brunch, I’m a big chicken and waffle fan, though we don’t make waffles at home.
But I don’t do breakfast burritos except rarely.
I’ve heard it’s the most important meal of the day, but I’ve also heard that the concept of a big breakfast was created as a marketing campaign to sell corn flakes.
All I know is that when we go out, they don’t have cinnamon toast on the menu most of the time.
I’m not sure I would get it, but I like having the option.
Besides, they’d probably spread the butter to every corner of the bread giving it an even standard coating and toast it to perfection under a glowing red coil.
The same way every time.
Who would remember that?

Cinnamon toast was one of my favorites, too. We got up at five am for school, so we didn't want to eat a big breakfast. With three girls and my Mom (my father worked away from home) we weren't big meat eaters so no bacon or eggs. Always just white bread and I didn't know there were other kinds of bread.
