Cinnamon toast was one of my favorites, too. We got up at five am for school, so we didn't want to eat a big breakfast. With three girls and my Mom (my father worked away from home) we weren't big meat eaters so no bacon or eggs. Always just white bread and I didn't know there were other kinds of bread.
My father was the one that really taught me how to cook growing up, and I learned more baking from my mother in later years of my youth, but breakfast was normally Sundays most of the morning or when ever no one had work to do at all. Sadly it's been a few years since I've gotten to really sit down with my father for breakfast I should correct that, but oh boy the things we would cook. Steak and eggs, breakfast burrito big enough to were just looking at them made you full, and one time a massive cauldron of soup with so many hand made wontons that we needed to refill the soup to cook more wontons lol but we also made the classics with our own twist and turns on it. I didn't realize I missed that level of peaceful mornings, haven't had that in a few years now.

I love making (and eating) a bacon, fried egg, and black pepper cooper cheese sandwich on a brioche roll.
